This skinning knife is from Tramontina's Professional Master range. The blades in the professioal range are either German Krupp 1.4110 or the Swedish 12C27, both excellent stainless steels. The polypropylene handles are Microban treated for antimicrobial protection. These knives are US, NSF approved for food safety.
