This 5" boning knife is from Tramontina's Professional Master range. This range of knives use the German Krupp 1.4110 or the Swedish 12C27 stainless steels. Handles are foodsafe, NSF rated and Microban treated polypropylene. This knife is called the 5" boner, but because there is no ricasso and the blade is sharp all the way to the handle, you get 5 3/4" of useable edge.
